My 3 Go-To Lunch Recipes

I want to start by saying I am not a chef by any means. I try to use versatile and inexpensive ingredients to make my lunches, and I usually try to make things that don't take too much time to prepare. All that being said, I hope this post will give you some ideas!
1. Buffalo Chicken Mac n' Cheese
This is one of my absolute favorite I will easily eat this dish 3 to 4 times a week. I use broiled chicken, organic mac n cheese, and just a few crunchy bread crumbs and a little hot sauce, so it's definitely lighter than some gourmet mac n cheeses you get at restaurants.
For this recipe I use:
pre-cooked chicken breast (I usually cook 2-3 breasts at the beginning of the week to use for lunches)
whole wheat panko crumbs
mac n cheese of your choice (I use Annie's white cheddar mac)
garlic powder
hot/wing sauce of your choice
Directions:
Make your mac n cheese!
Warm up your chicken in a separate bowl
Once your mac n cheese is made, mix in a little bit of garlic power
mix your mac n cheese and warmed chicken together
sprinkle panko crumbs and drizzle on some buffalo sauce
2. Chicken and Cheese Panini
I love having this sandwich with some chips. It's so much fun to kinda make your own, and switch it up every now and then
Ingredients I use:
Bread of your choice
Swiss cheese
Condiment(s) of choice (I use honey mustard or garlic buffalo ranch)
Chicken! I use sliced chicken breast but you can also find carving board chicken in the deli meat section at the grocery store
Butter
other things to add: avocado, lettuce, tomato
How to put it together:
Pre heat either your panini maker or your skillet
Butter the outside of your bread
Layer your sandwich ingredients
Grill it or put it in your panini maker and viola!
3. Caesar Salad
This one is definitely the easiest lunch. I buy these pre-made in the produce section at Weggies. They have so many options for prepackaged salads, but the caesar is definitely my favorite. Sometimes I will add a hardboiled egg and I always add more croutons
